Fructosyl Transferase

Fructosyl transferase (FTase) enzyme catalyses the reaction in presence of sucrose which leads to the synthesis of Fructooligosaccharide (FOS). FOS are one of the important prebiotic-oligosaccharide which are not digested in the stomach and pass on to the intestine where these are fermented and helps in maintaining good gut flora.

Functional properties:

  • pH: 5.5

  • Temperature: 55-60°C
