Glutaminase

Also known as L-glutaminase and glutamine aminohydrolase. Glutaminase enzyme is an amidase (amino acid hydrolysing) enzyme which helps in the production of glutamate from glutamine with release of ammonia.

Prime Industrial Uses:

  • Used as a marker in detection of cancer.

  • It helps in improving the taste of meat.

  • Used as a food additive.

  • Glutaminase enzymes are used in improving the texture of food.

  • Used in Vitamin B6 production.

  • Production of glutamate.
